Pork Belly Burnt Ends

Pork belly cut into 1/2in cubes. I used the pork belly strips from Costco.

Season with your favorite rub on all sides. I used West Coast Sweet Heat from @rubloveseasonings.

Place on a rack to easily move to the smoker. Smoke at 225 for 1.5-2 hours. The edges will look like they’re caramelizing. Check the temp around the 1.5hr mark because you’ll be completely done and ready to eat at 202-205 degrees. At this point your burnt ends should be around the 165 mark. Place in foil pan and coat with your favorite bbq sauce. I used Blazing Star BBQ’s Original sauce and a half stick of butter cut up. Cover with foil and place back in your smoker for about an hour and then smoke uncovered for 30 minutes. The internal temp should be around 202-205. 


Sauce

Mix some of the pan drippings from the burnt ends, more bbq sauce and a few tablespoons of mayonnaise. 


Dough

2.25g yeast

1 cups 110 degree water

1tsp sugar

  • Mix and let sit for 15 minutes


Mix in 3 cups of 00 Flour, 1tbsp salt and 2 tbsp of olive oil. I used a kitchenaid mixer and once I had a dough and put it on the counter with some flour and kneaded until it was smooth. Place the dough in a well oiled bowl and let rest for an hour or two. It will double in size and you’ll get two medium sized pizzas from this recipe. 


Top your pizza with some sauce, burnt ends, purple onions and a bunch of low moisture mozzarella.
